Day 4 - In my cup.
I actually don't EVER drink out of a cup believe it or not. I am a big fan of my water bottle (see my post for day 2. But my newest obsession is my cookie in a cup! I actually like my oatmeal cookie recipe better but today I felt like some chocolate chip so this is what I did. I will post the oatmeal cookie one another day.
After seeing all the Pinterest pins for cookies, brownies, and cupcakes in single-serving sizes I finally broke down and tried it. This works out perfect for me for a few reasons - my husband and roommate are on hard core diets and would kill me if I made a batch or two of cookies! Gluten free recipes are pretty expensive too and I love to be able to just make a small individual size and not have to worry about anything going to waste :)
I have played around with a few recipes and this is what I've come up with for the chocolate chip version. Totally gluten free, only takes a minute to make and a minute to cook and no clean up!
Coffee Cup Chocolate Chip Cookie:
Get a microwave safe bowl or coffee cup. Mix these in it:
1/4 cup sweet rice flour (I use Bob's Red Mill)
1 Tbsp. melted butter
1 Tbsp. brown sugar
1/2 Tbsp. white sugar
1 egg yolk
A few drops of vanilla
1 Tbsp. chocolate chips (I use Nestle Toll House or Enjoy Life)
Mix up in your cup and microwave for 60 seconds. That's it! Make sure not to overcook because the chocolate will burn and it will taste awful.
