I am cringing posting a cell phone photo of this chicken but A) we devoured the entire pan of chicken before I could even think to take a photo (if you look closely there are already a couple of bites missing from this piece) and B) the recipe was SO good I decided to share now so that anyone looking for the perfect simple dinner recipe would not have to wait any longer. You're welcome. I promise to make this again and get a yummier picture posted in the future :)
I call this Man-Pleaser Chicken because, well, let's face it, my husband is nearly impossible to impress. Not only did he go in for seconds, but he insisted our roommate try it. Roommate is a man. He loved it, too. So without further ado...
4 large chicken thighs - bone in and skin on
1/2 cup spicy brown mustard
1/2 cup light brown sugar
1 Tbsp balsamic vinegar
Salt and pepper to taste
1. Preheat oven to 375 degrees. Line a baking dish with foil (you don't have to do that part, it just makes cleanup way easier). I do not always have the foresight to plan dinner in advance so a lot of times I cook chicken from it's frozen state which is perfectly acceptable. Just make sure to always use a meat thermometer to check the internal temp before you dig in.
2. Place chicken breasts side by side in baking dish. I cooked them from their frozen state so I ran them under warm water for just a second to rinse the frost off. Bake chicken for about 45 minutes.
3. Mix together your mustard, brown sugar, vinegar, salt and pepper and pour generously over the chicken. Place back into oven and bake another 10-15 minutes or until temperature reaches 165 degrees.
