Simple quick dinners: Asparagus and tomatoes with chicken
Sometimes (and by sometimes I mean basically every night) we just really need a quick dinner that will take a few minutes and a minimal amount of preparation.
Enter one pan meals. This one was a random craving the other night and we loved the way it turned out. Summer is the most glorious time in California!
All we used were:
One bunch of asparagus, chopped
One basket cherry tomatoes, sliced
One clove of garlic, diced
One onion straight out of the garden, chopped into big chunks
2 Tbsp. Coconut oil
1/2 cup water
Juice from 1 lemon
Sauteed on high for about 10 minutes and added some diced chicken that was pre cooked (we keep a tub of cooked chicken in the fridge at all times which makes these 10 minute meals sooooo quick and easy to do).
I didn't get a picture of the final product because we SCARFED it down. I added just sea salt to mine, Chris put Tapatio sauce in his and loved it so much he asked me to add red peppers next time so we will definitely be doing this one again soon.
